During an exclusive cocktail reception held in the beautiful gardens of Casa Velas, Rafael Moreno Valle, esteemed Governor of the state of Puebla, announced that Puebla will be hosting the Tianguis Turistico in 2013. Among the over 400 guests in attendance were important world travel industry professionals as well as guests of honor like Gloria Guevara, Mexico’s Secretary of Tourism. The Governor’s speech was given in English, as over 50% of the travel officials were from other countries.

Recipe:
1.5 oz Tamarind Concentrate
4 Fresh Mint Leaves
1.5 oz Tequila
½ oz Controy (Mexican Orange Liqueur)
Dash of Lemon Juice
Dash of Simple Syrup

Preparation:
Mix all ingredients in a shaker glass filled with ice, shake vigorously and serve in salt-rimmed frosted glass.

Ingredientes
200 gr. de filete de dorado
30 gr. de ajonjolí
1 gr. de sal fina
3 gr. de pimienta negra
70 gr. de papas cambray
40 gr. de piña
10 gr. de epazote
40 gr. de puré de papa
10 gr. de chile guajillo
10 gr. de chile pasilla
10 gr. de chile ancho
20 gr. de ajo
30 gr. de cebolla blanca
80 ml. de vino blanco
25 ml. de miel de abeja
15 ml. de aceite
500 ml. de agua

Filetee la cebolla y pique el epazote; corte las papas en rodajas de medio centímetro de ancho; pique finamente el ajo y corte los chiles en julianas delgadas.
Sofría en aceite las papas con la cebolla y sazone con sal y pimienta al gusto; agregue agua hasta cubrir las papas y permita que se cuezan. Agregue abundante epazote cortado en julianas.
Para la salsa de chiles: dore los chiles cortados en julianas con el ajo en abundante aceite, agregue inmediatamente el vino blanco, la miel de abeja y deje reducir un tercio de la mezcla; sazone al gusto.

Sazone el pescado y cubra con las semillas de ajonjolí por los dos lados, ponga los filetes a la plancha con un poco de aceite, y permita que doren por 3 minutos, voltéelo para terminar la cocción.

Para servir, coloque las papas con un poco del caldo en que se cocieron al centro del plato; sirva el pescado cubierto con ajonjolí encima de las papas y báñelo con la salsa de tres chiles. Decore con hojas de epazote fresco.
